Where do ancho chili peppers actually come from? Exactly, like many chilis, they come from Mexico. You simply dry deep green poblano chilis and hey presto, you have developed a new delicious ingredient. You can recognize ancho chilis by their typical black-brown color and fruity, smoky flavor. They are perfect for cooking with poultry, for grilled meat, chili con carne, TexMex dishes - but also for many Asian dishes. In Mexico they are even used with chocolate or in desserts. Dried ancho chilis are relatively large chilis at 10-15 cm and relatively mildly spicy. To process them, either chop them roughly and roast them or simply place them in hot water. When the chilis are nice and soft, you can turn them into a paste really easy peasy.
